Ingredients: For the Rice:
2 cups basmati rice
4 cups water
1 teaspoon salt
For the Biryani:
1.5 pounds (700 grams) chicken, mutton, or your choice of protein
2 tablespoons ghee or vegetable oil
2 large onions, thinly sliced
2 tablespoons ginger-garlic paste
2 tomatoes, finely chopped
1 cup plain yogurt
2 teaspoons Premium Jeera Powder (cumin powder)
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon salt (adjust to taste)

Saffron strands soaked in milk, for garnish (optional)
Instructions:
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice to the boiling water along with 1 teaspoon of salt. Cook the rice until it is 70% cooked (it should still have a slight bite). Drain the rice and set it aside.
In a separate large pan or skillet, heat ghee or vegetable oil over medium heat. Add the thinly sliced onions and sauté until they turn golden brown and caramelized. Remove half of the onions and set them aside for garnishing.
To the remaining onions in the pan, add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add the chopped tomatoes to the pan and cook until they turn soft and blend into a thick gravy.
Reduce the heat to low and add the plain yogurt to the pan. Stir well to combine it with the tomato-onion mixture.
