Recipe: Aloo Methi with Methi Powder




Ingredients:

  • 4 medium-sized potatoes, peeled and cubed

  • 2 cups fresh fenugreek leaves (methi), washed and chopped

  • 2 tablespoons oil

  • 1 teaspoon cumin seeds

  • 1 teaspoon Methi powder (fenugreek powder)

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder (adjust to taste)

  • 1 teaspoon coriander powder

  • 1/2 teaspoon garam masala

  • Salt to taste

  • Fresh cilantro leaves, chopped, for garnish

  • Lemon wedges, for serving

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until fragrant.

  2. Add the cubed potatoes to the pan and sauté for a few minutes until they start to turn golden brown.

  3. Reduce the heat to low and sprinkle the Methi powder over the potatoes. Mix well to ensure the powder coats the potatoes evenly.

  4. Add turmeric powder, red chili powder, coriander powder, and salt to taste. Stir well to combine all the spices with the potatoes.

  5. Cover the pan and cook on low heat for about 10 minutes or until the potatoes are tender. Stir occasionally to prevent sticking.

  8. Remove the lid and sprinkle garam masala over the Aloo Methi. Stir gently to incorporate the masala into the dish.

  9. Cook uncovered for an additional 2-3 minutes to allow any excess moisture to evaporate, resulting in a dry and flavorful Aloo Methi.

  10. Remove from heat and garnish with freshly chopped cilantro leaves.
